Bubbles are synonym of feast, they appear in celebrations and are the perfect way to start a spicy evening, and I believe that only the transparency and elegance of hand crafted Venetian glasses are able to enhance the beauty of these golden alcoholic balloon-like bubbles. If you are dedicating your life to the quest of perfection, then I can only suggest a Franciacorta by Ca’ del Bosco!!!! and a tasty and light gourmet dish, ideals for evenings in which we will surely stay up late…

After having savoured it at L’Essentiale Restaurant, in Villa Laguna on Lido di Venezia, I recommend to pair the wine with:

Smoked salmon served with an apple and mint salad

Ingredients:

  • 2 slices of toasted bread
  • 120 gr smoked salmon
  • 1 apple (not too sour)
  • 10 mint leaves
  • extra virgin olive oil
  • 20 gr. butter

Method:

1) Cut the apple in long and thin slices and criss-cross them on a plate to create a sort of structure. Sprinkle some mint leaves and add a few drops of olive oil or lemon (optional).

2) Slice the salmon in thick and short slices and put them on the plate as if they were rays of sunshine.

3) Toast 2 slices of white bread, cut in quarters, in the form of a triangle. Finally add them to the side of your dish and enjoy!
